The 2000 year old salt works at Ston on the peljesac peninsula (halfway between Dubrovnik and Korcula) date back to the Roman empire, although it is suspected that that the salt production at this site has an even older pedigree.

Only 18 local men are allowed to work the 18 great evaporation pans during the summer,producing a small quantity of salt each year that is famed throughout Croatia for its taste. You will find all the smarter restaurants in Dubrovnik making a point of the fact that they use Ston salt in their cooking.

The Walls of Ston are an awsome sight. Aside from the salt production, the remains of a series of medieval defensive walls may be viewed and walked at no cost. These were built to protect the salt works from takeover from the east and are a truly impressive set of fortifications climing all over the surrounding hills. Climb the walls in the morning and avoid the midday sun.
